Cottage Cheese Bagels

Everything is cottage cheese these days and I'm not quite here for it...except in these bagels. While this is still considered a carbohydrate, it can be a higher protein alternative to the delicious breakfast food we all know and love. â€‹â€‹â€‹â€‹â€‹â€‹â€‹â€‹â€‹â€‹â€‹â€‹â€‹â€‹â€‹â€‹â€‹â€‹â€‹

What you'll need

1 cup flour (I used whole wheat flour to sneak in more fiber for my kids)

1 cup full-fat cottage cheese

1 1/2 teaspoons baking powder


1 egg

What you'll do

Combine ingredients (minus the egg) into a bowl. Mix with a spatula first, then use hands to knead the dough. The dough will start out crumbly. Work the dough until it is not too sticky and not too dry. Pack it into a ball and let it sit in the bowl, covered with a tea towel, for 10 minutes.

Meanwhile, preheat the oven to 350 degrees F.

Grab a cooking sheet and cover it with parchment paper. Grab your dough ball and roll it out into a long log. The longer and thinner your dough log, the more bagels you will make (but they will be smaller). 

​

Divide your dough into even parts (this usually makes about 8 small bagels). Roll them into smaller logs and connect the ends to form a ring. Repeat this with the remaining dough. 

 

Beat the egg in a small cup and lightly wash the bagels with it. Sprinkle your favorite seasonings and bake in the oven for 20-25 minutes. 

 

Let the bagels cool completely and enjoy!
